From the kitchen… Introducing Chris Redmond
The chefs behind the pass are central to your dining experience, and while you may have experienced our menu, you may not know the people behind the cuisine.
We would love to introduce you to our head chef, Chris Redmond, and share a little about his career and how he came to be where he is today, a crucial part of the Embassy XO kitchen.
Chris moved to Australia from the United Kingdom where he worked in Michelin Star restaurants Lindsay House, Wild Honey and La Trompette.
Ready for a move to warm and sunny weather, he and his partner relocated to Australia, where he joined the Spice Bar kitchen in Mooloolaba, before taking a sous chef role at Embassy XO.
Chris worked alongside Joo Kim for several years, and eventually accepted the role of Executive Chef. Chris loves what he does and his passion and infectious enthusiasm is a wonderful addition to the Embassy XO kitchen.
