SPARKLING red wines have had a somewhat checkered history in Australia, going in and out of favour over the years.
Unfortunately some ordinary wines – too sweet and from low quality grapes – turned some people off but now we are recognised as producing some of the best examples in the world.
They are the perfect way to enjoy our classic Australian red wine varieties over summer and the best examples are fantastic to enjoy over the festive season.
They should combine the juicy, berry, plummy spice flavours and tannins of the grape with a fizz and chill and touch of sweetness perfect for a summer’s day.
Sparkling shiraz is an Australian invention first made in the late 1880s and called Sparkling Burgundy.
When made well with quality grapes it’s perfect as an aperitif or with the foods we enjoy at Christmas.
Glazed ham, roast turkey with cranberry and intense game flavours with a sweet sauce or roast duck would be a great match.

And don’t forget some other Aussie classics – a Rutherglen muscat for strong cheeses and richer chocolate desserts and a botrytis semillon or riesling for a sweet, fruitier finish.
